Company history
La Chanteracoise is a project of heart and passion. It’s an atypical place that hasn’t lost its soul of yesteryear: it’s the last artisan biscotti factory in France. Located equidistant between our campsite with swimming pool in the Dordogne and Périgueux, you can’t miss a visit during your vacation and discover its history. It all began in the 1950s , when a young boy discovered the fascinating world of baking. His mentor, touched by his dedication, entrusted him with the hitherto secret recipe for his famous rusks. The young apprentice works tirelessly for several years to perfect his know-how. He became a connoisseur who mastered the making of the famous rusks. As demand grew, he set up his own business: La Chanteracoise. This craftsman devotes himself exclusively to the preparation of these incredible products. His secrets have now been handed down from generation to generation. They reflect a passion for bread and all crispy delights.
Manufacturing secrets
Always faithful to tradition, the raw materials are carefully selected. The company is committed to preserving the excellence of its authentic recipes. No colorants are used in our products. You’ll also notice that there are no added preservatives. GMOs are also banned from the manufacturing process. To obtain a quality rusk, you need a great deal of patience and manual handling. In fact, it takes 3 to 4 days to complete all the stages. First, the ingredients are meticulously weighed. This is followed by kneading to obtain a homogeneous dough. The artisan then focuses on preparing the dough pieces, which are placed in open molds. The dough is then placed in open molds and left torest in an oven at a specific temperature before being transformed into bread. There are two baking processes, separated by 24 hours’ storage . The final stage is packaging. Sorting and packaging are also done by hand. This guarantees the selection of pieces with impeccable texture.

It’s open Monday to Friday, 8 a.m. to 12 p.m. and 1.30 p.m. to 6.00 p.m.
